Enzymes and Long Term Foods?

I'm a huge advocate of mostly raw foods. Greens, peppers, 'maters, fruits, you name it. Minimally cooked meats, nearly raw inside (except fowl).

My concern is most all long term stored food is deficient in the necessary enzymes for proper digestion. Worse, to digest the cooked foods the body must steal enzymes from our organs and their natural functions. This leads to degenerative disease long term.

So, the problem is how to ingest some uncooked, unheated nutrients. Sprouting seeds? Do they store well? I would think so, but am not yet sure. How long do supplemental enzymes last? A few years?

Fats are another problem. Heated fats are corrupted and likely rancid. Coconut oil will keep for a few years. Chia seeds are abundant in good fatty acids and will store for maybe 5 years. Flax seeds? Canned butter might work. Any ideas on fats is welcome.

Yes, I realize that in dire situations any food is most welcome and appreciated. Just trying to prepare as best I can.

Here is some information.

Do you have any basis for your disbelief?

Sprouts are an envious nutrient to have when TSHTF. They're really only great as, well, fresh sprouts. The larger the garden the more they will be included in the diet; very versatile. Another such advantageous foodsruff that simply requires gratuitous pre-planning are shiitake mushroom logs. Shiitake dry, store and reconstitute extremely well.

Depends upon the seed, of course. Onion seeds, not so good. A couple of years outside I think. Peas and beans 3 or 4 years. Alfalfa seeds, 8 years. Wheat berries, nearly forever.

Well, I must be wrong if you don't believe it. :D

Sorry macrohard, it's true. Look around you at all the sick, obese people. It's because of the food they eat. Not how much, but what kind and what form.

Thanks guys, I'm buying some more of the long term seeds and the means to sprout them.

Mung beans and alfalfa

This is my salad goal,Mungs and alfalfa from quart jars. Those are both 'rolls' that were fitting inside the jars snugly.I want to do this every four days as our fresh salad base.I sure think they are pretty. The leftovers will be chicken snacks.

Alfalfa sprouting...

A pic...
Day 7,jar is jammed with sprouts, excellent color, growth, taste and cleanliness.I may let them go for 2 more days to get a bit larger. Then into a ziplock in refer and start eating.

Alfalfa in jars is a 100% success, from now on Im doing them in jars.

4 bean sprout salad

Mung,soy,adzuki,green lentil beans

3 tablespoons each,6 of soy as soy beans are so much larger.Note how little in the 1 quart sprouting jar.I rinsed it 6 times, and soaked them covered with water for 6 hours. Then rinsed 2-3 times a day.

My only thought is it seams to be a waste of water to produce the sprouts..is it?

We punched a new well last year and I'm still getting used to the fact that we have much more water than we did in the past, I still don't take it for granted, a well around these parts can dry up at any time and some last for years and years. I'm watering a large garden now and 10 fruit trees, sometimes I wonder if the veggies we harvest will be worth all the water time & organic fertilizer used, don't get me wrong it's enjoyable and quality assured but is it cost effective ?.....I'll find out.

I wonder what would happen if I was to rinse sprouts with my well water....it is very very very hard....calcium carbonate, atleast there's no contamination in it.

I dont think so.Youre just using enough water to cover them in a quart jar, swish it around and pour it out. However,if your water was that limited the sprout water could be put to other uses, tree water, toilet, or.....

The threat from the rinse water is E.Coli, which you dont want on the sprouts and why you rinse them, besides watering them.

I really dont know if the extra calcium would harm them or not.

Thanks, I wasn't sure how much water needed to be used for rinse.....what you speak of isn't so bad.....I'll just have to find out how my hard water works
